  • 2 cups sugar
  • 2 1/2 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

  • 1 3/4 sticks unsalted butter softened
  • 2 teaspoons vanilla
  • 2 large eggs

Preparation:

Adjust an oven rack to the middle position in the oven.

Preheat the oven to 350 degrees

Spread 1/2 cup of the Sugar in a shallow dish for coating the sugar cookies

In a medium sized bowl, mix together the Flour, Baking Powder and Salt. Set aside.

In a large bowl, beat together the softened Butter and the remaining 1 1/2 cups of Sugar using an electric mixer on medium speed until light and fluffy. (about 3 to 5 minutes)

Beat in the Vanilla, then the Eggs one at a time, scraping down the sides of the bowl as needed.

Reduce the mixer speed to low and slowly mix in the flour mixture from step #4.

Wet your hands and roll 2 tablespoons of dough at a time into balls.

Then roll the dough balls into the sugar to coat.

Place the dough balls on parchment-lined baking sheets, spaced about two inches apart.

Flatten the cookies with the bottom of a drinking glass that has been buttered. They should be about 1/2 thick.

Bake the cookies one sheet at a time until the edges are set and just beginning to brown but the centers are still soft and puffy. Baking time should be 10 - 12 minutes.

Rotate the baking sheet halfway through the baking time.

Let the cookies cool 10 minutes on the baking sheet, then transfer them to a cooling rack. (See the baking tip on using Parchment Paper)

Makes about 2 dozen cookies
