Origin of BiscottiThe word "biscotti" in Italian is the plural form of biscotto, which applies to any type of biscuit or italian cookie, and originates from the medieval Latin word biscoctus, meaning "twice-baked". They were originally made as a long-shelf-life food for travelers and carried by the Roman Armies After the fall of the Roman empire, a Tuscan baker picked up the recipe and started to serve them with the local sweet wine called Vin Santo. Their dry, crunchy texture was deemed to be the perfect way to soak up the sweet local wine. Centuries later, many still agree that dipping biscotti into wine, coffee or tea is a perfect way to end a meal. Almond is the traditional flavor since almonds were readily available in Italy and nearby countries. This Italian cookie became so popular that every province eventually developed their own flavored version.
