Pecan Pie Bars

Pecan Pie Bars are a delicious alternative to making a pecan pie. Especially since you can cut them up into any size you like. When we are serving these for parties, we slice them up into small bite sized pieces to make them easier to carry around.

This recipe is made easier than most by using cake mix for the crust. This cuts out a lot of prep time. You will be reserving 2/3 cup of the cake mix for the filling.

Due to the sticky consistency, it is important to wait until these pecan pie bars are fully cooled before cutting them into squares.

 

Pecan Bars Recipe

Ingredients:

Crust

  • 1 (18.25-oz.) pkg. Yellow Cake Mix
  • 1/3 cup margarine or butter, softened
  • 1 egg

 

 

 

Filling

    • 2/3 cup dry cake mix that you reserved for filling
    • 1/2 cup firmly packed brown sugar
    • 1 1/2 cups dark corn syrup
    • 1 teaspoon vanilla
    • 3 eggs
    • 1 cup chopped pecans

Preparation:

Crust

  1. Grease 13 x 9-inch pan. (cooking spray works well)
  2. PREHEAT oven to 350°F. (325°F for glass or dark pans)
  3. Reserve 2/3 cup of the dry cake mix for the filling.
  4. In large bowl, combine remaining Dry Cake Mix, Margarine and 1 Egg; beat at low speed until well blended.
  5. Press the crust mixture into the bottom of greased pan.
  6. Bake at 350°F. for 15 to 20 minutes or until light golden brown.

Filling

  • In a large bowl, combine reserved 2/3 cup Dry Cake Mix, Brown Sugar, Corn Syrup, Vanilla and 3 Eggs.
  • Beat 1 minute at medium speed or until well blended.
  • Pour filling mixture over warm crust that you baked.
  • Sprinkle with Pecans.
  • Return to oven; bake an additional 30 to 35 minutes or until filling is set.
  • Cool 1 1/2 hours or until completely cooled.
  • Cut into bars.
  • Store in refrigerator.

Cookie Tips

A large bowl is recommended when using electric beaters. If the bowl is too small the beaters will spray the ingredients out of the bowl.

 

Cookie Tips

You can soften butter or margarine in the microwave using lowest power setting for 5 seconds at a time until you can easily press your finger into the stick of butter.
