This Soft Chocolate Chip Cookie recipe is for those who love soft and chewy, rather than crisp, cookies. The big secret to making these cookies soft, is to use melted butter, which gives them a soft texture. You will need to watch them carefully as they bake. Overbaking will turn them crisp. It is usually a good idea to try baking one or two test cookies first to find the correct baking time.

Another technique for keeping these cookies soft, is to let them cool on the baking sheet. This will prevent air from circulating around them and keeps the cookies from becoming crisp. This will take a bit more time, since you can't off-load the cookies right away onto the cooling rack and then get the baking sheet ready for more.

 

Soft Chocolate Chip Cookie Recipe

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon of salt
  • 1/2 teaspoon of baking soda
  • 3/4 cup of unsalted butter, melted
  • 1 cup firmly packed brown sugar
    (light or dark)

 

 

  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 – 12 ounce bag of semi-sweet chocolate chips
  • 2/3 cup of walnuts (optional)

Preparation:

  1. If you are going to bake two sheets of cookies at a time, then arrange the racks in your oven to divide it into thirds. For baking with one sheet at a time, put one of the oven racks in the center of the oven.
  2. PREHEAT oven to 350°F.
  3. In a medium bowl, mix together the flour, salt and baking soda.
  4. In a large bowl, whisk together the melted butter and sugars.
  5. Whisk in the eggs one at a time, whisking until well blended.
  6. Whisk in the vanilla and then using a spoon or rubber spatula, mix in the dry ingredients until combined.
  7. Stir in the chocolate chips and walnuts.
  8. Drop by rounded tablespoon or cookie scoop onto ungreased baking sheets.
  9. Bake for 12 to 13 minutes or until the edges are golden brown. The centers of the cookies should be soft and slightly puffy. If you are baking with two sheets at a time, switch baking pans from top to bottom racks halfway through the cooking time. If you are baking with one sheet at a time then rotate the pan halfway through the cooking time. This will ensure that the cookies cook more evenly.
  10. When done, put the baking sheet onto a cooling rack and let them cool completely before taking the cookies off.
